Instructions
- Season the beef chuck roast generously with salt and pepper.
- Place the roast in your slow cooker.
- In a bowl, whisk together beef broth, red wine (if using), Worcestershire sauce, and soy sauce.
- Pour the liquid mixture over the roast.
- Sprinkle dried thyme and rosemary over the roast.
- Add chopped carrots, celery, onion, minced garlic, and quartered potatoes around the roast.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the roast is tender and easily shreds with a fork.
- Remove the roast and vegetables from the slow cooker.
- Shred the roast using two forks.
- Serve the shredded roast and vegetables with the cooking liquid spooned over the top.
Notes
- For a thicker gravy, you can remove the liquid from the slow cooker and simmer it on the stovetop with a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons cold water).
