A simple and flavorful dish featuring spicy andouille sausage and colorful bell peppers.
Ingredients

- 1 pound andouille sausage, sliced
- 2 bell peppers (any color), sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced andouille sausage and cook until browned on both sides. Remove sausage from skillet and set aside.
- Add the sliced bell peppers and onion to the skillet. Cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Return the sausage to the skillet. Stir to combine and heat through.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For extra spice, add a pinch of red pepper flakes.
- This dish is great served over rice or with crusty bread.
