Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  6. In a small bowl, toss the diced apples with cinnamon and nutmeg. Gently fold the spiced apples into the cake batter.
  7. Pour the batter into the prepared Bundt pan.
  8. In a small bowl, mix the brown sugar and pecans (if using). Sprinkle this mixture evenly over the top of the batter.
