Ingredients

  • 2 cups elbow macaroni
  • 2 ripe avocados
  • 1/2 cup mayonnaise
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery
  • 2 tablespoons lime juice
  • Salt to taste
  • Black pepper to taste
  • Optional: chopped fresh cilantro

Instructions

  1. Cook macaroni according to package directions. Drain and rinse with cold water.
  2. In a large bowl, mash the avocados with a fork.
  3. Add mayonnaise, red onion, celery, and lime juice to the bowl. Mix well.
  4. Add the cooked macaroni to the avocado mixture. Stir gently to coat.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving.
  7. Garnish with fresh cilantro if desired.
