Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk
  • 1/4 cup maple syrup or honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional: chocolate chips, nuts, or dried fruit

Instructions

  1. Preheat oven to 375°F (190°C). Grease mini muffin tin.
  2. In a bowl, mash the bananas.
  3. Stir in oats, milk, maple syrup, baking powder, cinnamon, and salt.
  4. If using, add chocolate chips, nuts, or dried fruit.
  5. Fill mini muffin cups about two-thirds full.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in the tin for a few minutes before removing.
