Mini banana oatmeal muffins perfect for a quick snack or breakfast.
Ingredients

- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup milk
- 1/4 cup maple syrup or honey
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- Optional: chocolate chips, nuts, or dried fruit
Instructions
- Preheat oven to 375°F (190°C). Grease mini muffin tin.
- In a bowl, mash the bananas.
- Stir in oats, milk, maple syrup, baking powder, cinnamon, and salt.
- If using, add chocolate chips, nuts, or dried fruit.
- Fill mini muffin cups about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- Let cool in the tin for a few minutes before removing.
Notes
- Adjust sweetness to your preference.
- Store in an airtight container at room temperature for up to 3 days.
- Freeze for longer storage.
