  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup cornstarch
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon rice vinegar
  • 4 cups cooked day-old white rice
  • 1 cup frozen peas and carrots, thawed
  • 1/2 white onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced, for garnish

Instructions

  1. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
  2. Toss chicken pieces with cornstarch until fully coated.
  3. Add coated chicken to the hot skillet and cook until golden brown and crispy, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to make the Bang Bang sauce.
  5. Add remaining 1 tablespoon vegetable oil to the same skillet. Add diced white onion and cook until softened, about 3 minutes.
  6. Add minced garlic, peas, and carrots to the skillet and cook for another 2 minutes.
  7. Add cooked rice to the skillet, breaking up any clumps. Stir-fry for 3-5 minutes until heated through.
  8. Pour soy sauce and sesame oil over the rice and stir to combine.
  9. Return the crispy chicken to the skillet with the fried rice. Drizzle the Bang Bang sauce over the chicken and rice.
  10. Toss gently to combine all ingredients, ensuring the chicken is coated in the sauce.
  11. Serve immediately, garnished with sliced green onions.
