- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup cornstarch
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce

- 1 teaspoon rice vinegar
- 4 cups cooked day-old white rice
- 1 cup frozen peas and carrots, thawed
- 1/2 white onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 green onions, sliced, for garnish
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Toss chicken pieces with cornstarch until fully coated.
- Add coated chicken to the hot skillet and cook until golden brown and crispy, about 5-7 minutes. Remove chicken from skillet and set aside.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to make the Bang Bang sauce.
- Add remaining 1 tablespoon vegetable oil to the same skillet. Add diced white onion and cook until softened, about 3 minutes.
- Add minced garlic, peas, and carrots to the skillet and cook for another 2 minutes.
- Add cooked rice to the skillet, breaking up any clumps. Stir-fry for 3-5 minutes until heated through.
- Pour soy sauce and sesame oil over the rice and stir to combine.
- Return the crispy chicken to the skillet with the fried rice. Drizzle the Bang Bang sauce over the chicken and rice.
- Toss gently to combine all ingredients, ensuring the chicken is coated in the sauce.
- Serve immediately, garnished with sliced green onions.

- Day-old rice works best for fried rice as it is drier and prevents sticking.
- Adjust the amount of Sriracha to your preferred spice level.
- You can add other vegetables like bell peppers or broccoli.
