A simple sweet potato pie recipe made quickly using a blender for a smooth filling.

- 1 (15 ounce) can sweet potatoes, drained
- 1 (12 ounce) can evaporated milk
- 3 large eggs
- 1/2 cup maple syrup
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 (9 inch) unbaked pie crust
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Place the drained sweet potatoes, evaporated milk, eggs, maple syrup, brown sugar, cinnamon, ginger, nutmeg, and salt into a blender.
- Blend the mixture until it is completely smooth.
- Pour the filling into the unbaked pie crust.
- Bake at 425 degrees Fahrenheit for 15 minutes.
- Reduce the oven temperature to 350 degrees Fahrenheit.
- Bake for an additional 35 to 40 minutes, or until a knife inserted near the center comes out clean.
- Cool the pie on a wire rack before serving.
Notes
- For a richer flavor, use dark amber maple syrup.
- If you do not have a blender, you can mash the sweet potatoes well before mixing the ingredients by hand.
