  • 3 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 (9 inch) unbaked pie crust

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Place the drained sweet potatoes, evaporated milk, eggs, maple syrup, brown sugar, cinnamon, ginger, nutmeg, and salt into a blender.
  3. Blend the mixture until it is completely smooth.
  4. Pour the filling into the unbaked pie crust.
  5. Bake at 425 degrees Fahrenheit for 15 minutes.
  6. Reduce the oven temperature to 350 degrees Fahrenheit.
  7. Bake for an additional 35 to 40 minutes, or until a knife inserted near the center comes out clean.
