Ingredients

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ounce blue food coloring
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 15 Oreo cookies, crushed

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, vanilla extract, and blue food coloring.
  4. Add wet ingredients to dry ingredients and mix until just combined. Do not overmix.
  5. Pour batter evenly into prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  8. While cakes cool, make the cheesecake layer. In a medium bowl, beat together 8 ounces of softened cream cheese and 1/2 cup powdered sugar until smooth.
  9. Stir in crushed Oreos.
  10. Spread the cheesecake mixture evenly over one cooled cake layer.
  11. For the frosting, beat remaining 16 ounces of cream cheese and 1 cup powdered sugar until smooth.
  12. Add 1 teaspoon vanilla extract and heavy cream and beat until light and fluffy.
  13. Place the second cake layer on top of the cheesecake layer.
  14. Frost the entire cake with the cream cheese frosting.
  15. Chill the cake for at least 2 hours before serving.
