Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In a small bowl, whisk together the buttermilk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Gently fold in the blueberries.
  8. Pour the batter into the prepared baking pan.
  9. For the streusel topping, combine the flour, brown sugar, cinnamon, and melted butter in a small bowl. Mix until crumbly.
  10. Sprinkle the streusel topping evenly over the batter.
  11. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan before serving.

Notes

  • Use fresh or frozen blueberries. If using frozen, do not thaw them.
  • Do not overmix the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
