- 2 cups fresh blueberries
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Combine blueberries and lemon juice in a saucepan. Cook over medium heat until blueberries soften and release their juices, about 5-7 minutes. Mash some of the blueberries with a spoon.
- Remove from heat and let cool completely.
- In a large bowl, whisk together heavy cream, milk, sugar, and vanilla extract until sugar dissolves.
- Stir the cooled blueberry mixture into the cream mixture.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
Notes
- For a smoother ice cream, strain the blueberry mixture before adding it to the cream base, removing the skins.
- Adjust sugar to your preference.
- Serve with fresh blueberries or a sprinkle of granola.
