Description
A simple grilled cheese sandwich featuring homemade broccoli pesto.
Ingredients

- 2 slices bread
- 2 tablespoons broccoli pesto
- 2 slices cheese (cheddar or provolone recommended)
- 1 tablespoon butter
Instructions
- Spread butter evenly on one side of each slice of bread.
- Flip one slice of bread butter-side down in a skillet over medium heat.
- Top the bread with cheese slices.
- Spread broccoli pesto evenly over the cheese.
- Place the second slice of bread on top, butter-side up.
- Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from skillet, slice in half, and serve immediately.
Notes
- You can make the broccoli pesto ahead of time and store it in the refrigerator for up to one week.
- Use your favorite type of bread, such as sourdough or whole wheat.
