Description
A moist and flavorful banana cake enhanced with the nutty notes of brown butter and a hint of bourbon.
Ingredients
Scale
- 1 cup (2 sticks) unsalted butter
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup bourbon
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling occasionally, until the butter turns golden brown and smells nutty. Remove from heat and let cool slightly.
- In a large bowl, cream together the brown butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and bourbon.
- Mix in the mashed bananas until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Ensure your bananas are very ripe for the best flavor and sweetness.
- For a stronger bourbon flavor, you can add an extra tablespoon of bourbon to the batter.
- This cake can be stored at room temperature in an airtight container for up to 3 days.
