  • 1.75 quarts vanilla ice cream, softened
  • 1/2 cup heavy cream
  • 4 oz bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Bake brownies according to package directions in a 9×13 inch pan. Let cool completely.
  2. Once cooled, cut the brownies into two equal 9×6.5 inch rectangles.
  3. Line a 9×13 inch pan with parchment paper, leaving an overhang on the sides.
  4. Place one brownie rectangle at the bottom of the prepared pan.
  5. Spread the softened vanilla ice cream evenly over the brownie layer.
  6. Top with the second brownie rectangle.
  7. Cover and freeze for at least 4 hours, or until firm.
  8. For the ganache: In a small saucepan, heat heavy cream until simmering.
  9. Remove from heat and add chopped chocolate and butter. Let sit for 5 minutes.
  10. Whisk until smooth and glossy.
  11. Remove the ice cream cake from the freezer using the parchment paper overhang.
  12. Pour the warm ganache over the top of the frozen cake, spreading evenly.
  13. Freeze for another 30 minutes to set the ganache.
  14. Slice and serve immediately.
