Small, flavorful bites featuring Cajun seasoned shrimp, fresh guacamole, and crispy tortilla shells.

- 1 lb medium shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 ripe avocados
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons fresh lime juice
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 12 small corn tortillas
- Cooking spray
Instructions
- Toss shrimp with Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
- In a bowl, mash avocados.
- Mix in red onion, jalapeño, lime juice, and cilantro with the mashed avocado. Season with salt and pepper.
- Lightly spray both sides of the corn tortillas with cooking spray.
- Bake tortillas on a baking sheet at 375 degrees F (190 degrees C) for 8-10 minutes, or until crisp and slightly curved. Watch carefully to prevent burning.
- Once tortillas are cool enough to handle, spoon a small amount of guacamole into each shell.
- Top each bite with 2-3 pieces of cooked Cajun shrimp.
Notes
- You can substitute pre-cooked shrimp if you prefer a faster preparation time.
- If you like more heat, leave some seeds in the jalapeño.
- Bake the tortillas directly on the oven rack for maximum crispness.
