A moist and flavorful carrot cake layered with a creamy caramel filling and topped with toasted pecans.

- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves

- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups grated carrots
- 1 cup chopped pecans, toasted
- 1 cup prepared caramel sauce
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, whisk together granulated sugar, vegetable oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the grated carrots and 1/2 cup of the toasted pecans.
- Pour batter evenly into the prepared pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cakes cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
- While cakes cool, prepare the frosting. In a large bowl, beat together cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
- To assemble the cake, place one cake layer on a serving plate. Spread a layer of caramel sauce over the cake.
- Spread half of the cream cheese frosting over the caramel layer.
- Place the second cake layer on top. Spread the remaining frosting over the top and sides of the cake.
- Drizzle remaining caramel sauce over the top of the cake.
- Press remaining toasted pecans onto the sides and top of the cake.
- Refrigerate for at least 30 minutes before serving.
