Description

A moist and flavorful carrot cake layered with a creamy caramel filling and topped with toasted pecans.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped pecans, toasted
  • 1 cup prepared caramel sauce
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together granulated sugar, vegetable oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the grated carrots and 1/2 cup of the toasted pecans.
  6. Pour batter evenly into the prepared pans.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
  9. While cakes cool, prepare the frosting. In a large bowl, beat together cream cheese and butter until smooth.
  10. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
  11. To assemble the cake, place one cake layer on a serving plate. Spread a layer of caramel sauce over the cake.
  12. Spread half of the cream cheese frosting over the caramel layer.
  13. Place the second cake layer on top. Spread the remaining frosting over the top and sides of the cake.
  14. Drizzle remaining caramel sauce over the top of the cake.
  15. Press remaining toasted pecans onto the sides and top of the cake.
  16. Refrigerate for at least 30 minutes before serving.
