Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup grated zucchini (squeezed of excess moisture)
  • 1/2 cup finely chopped apple
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the eggs, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the grated carrots, grated zucchini, chopped apple, and chopped walnuts (if using).
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
