Ingredients

- 1 acorn squash, peeled and sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss squash rounds with olive oil, salt, and pepper.
- Arrange squash on a baking sheet.
- Bake for 15-20 minutes, or until tender.
- Sprinkle with Parmesan and mozzarella cheeses.
- Bake for another 5-7 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley if desired.
Notes
- You can use other types of squash like butternut or delicata.
- Adjust salt and pepper to your taste.
- Add other seasonings like garlic powder or paprika.
