- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces rotini pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Cook rotini pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese and milk until the sauce is smooth and thickened.
- Add the cooked rotini pasta to the skillet with the sauce and chicken. Toss to coat evenly.
- Serve immediately, garnished with fresh parsley.

- For a lighter sauce, you can use half-and-half instead of heavy cream.
