- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked white rice
- 2 cups broccoli florets
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cook rice according to package directions.
- In a large bowl, combine cooked rice, chicken pieces, broccoli florets, cream of chicken soup, milk, cheddar cheese, salt, and pepper.
- Stir until well combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 10-15 minutes, or until the casserole is bubbly and the chicken is cooked through.
- Let stand for 5 minutes before serving.
Notes
- For a richer flavor, use heavy cream instead of milk.
- Add a pinch of garlic powder or onion powder for extra flavor.
- Top with extra cheese or breadcrumbs before the final baking stage.
