Ingredients

  • 1 pound pasta (penne or rotini)
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cherry or grape tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons balsamic glaze
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season chicken breasts with salt and pepper.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side, until cooked through (internal temperature reaches 165°F). Remove chicken and let rest, then slice or dice.
  4. In a small bowl, combine halved tomatoes, chopped basil, minced garlic, remaining 1 tablespoon of olive oil, and balsamic vinegar. Mix gently.
  5. In a large bowl, combine the cooked pasta, the tomato mixture, and the sliced chicken. Toss to combine.
  6. Drizzle with balsamic glaze and sprinkle with Parmesan cheese before serving.

Notes

  • You can grill the chicken instead of pan-frying for added flavor.
