Description

A simple recipe for a cold pasta salad featuring chicken and Caesar dressing flavors.


Ingredients

  • 12 oz pasta (rotini or penne)
  • 2 cups cooked, shredded chicken breast
  • 1 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to cool completely.
  2. In a large bowl, combine the cooled pasta, shredded chicken, Caesar dressing, and Parmesan cheese.
  3. Mix gently until all ingredients are evenly coated.
  4. Stir in the chopped parsley.
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.
  6. Just before serving, toss in the croutons.

Notes

  • You can use rotisserie chicken for faster preparation.
  • For a tangier flavor, add 1 teaspoon of lemon juice to the dressing mixture.
