Quick assembly of ground chicken filling served in crisp lettuce cups.


Ingredients

  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water chestnuts, chopped
  • 1/2 cup shredded carrots
  • 8 large butter lettuce leaves

Instructions

  1. Heat vegetable oil in a skillet over medium heat.
  2. Add ground chicken and cook, breaking it up, until browned. Drain any excess fat.
  3. Add onion, garlic, and ginger to the skillet. Cook for 3 minutes until fragrant.
  4. Stir in soy sauce, hoisin sauce, rice vinegar, and sesame oil. Bring to a simmer.
  5. Add water chestnuts and carrots. Cook for 2 minutes, stirring constantly.
  6. Remove from heat.
  7. Spoon the chicken mixture into the center of each lettuce leaf.
  8. Fold or wrap the lettuce around the filling and serve immediately.

Notes

  • Use iceberg or romaine lettuce for a crunchier wrap.
  • For extra flavor, add 1 teaspoon of sriracha to the sauce mixture.
