A straightforward recipe for a comforting chicken and orzo soup.

- 6 cups chicken broth
- 1 cup shredded cooked chicken
- 1/2 cup orzo pasta
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 small onion, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add carrot, celery, and onion. Cook until soft, about 5 minutes.
- Pour in chicken broth and add thyme. Bring to a boil.
- Add orzo pasta and cook according to package directions, usually 8-10 minutes.
- Stir in shredded cooked chicken. Heat through for 2 minutes.
- Season with salt and pepper before serving.
Notes
- For extra flavor, use homemade chicken broth.
- You can substitute dried parsley for thyme if preferred.
- If you do not have cooked chicken, simmer 1 chicken breast in the broth until cooked, then shred it.
