  • 1 cup shredded cooked chicken
  • 1/2 cup orzo pasta
  • 1 medium carrot, diced
  • 1 celery stalk, diced

  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrot, celery, and onion. Cook until soft, about 5 minutes.
  3. Pour in chicken broth and add thyme. Bring to a boil.
  4. Add orzo pasta and cook according to package directions, usually 8-10 minutes.
