  • 1/4 cup frozen peas and carrots blend
  • 1/4 cup chopped green onions
  • 1 egg, lightly beaten
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce (optional)
  • 1/2 teaspoon sugar
  • Pinch of white pepper

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add peas and carrots to the skillet and stir-fry for 2 minutes.
  4. Push vegetables to one side of the skillet. Pour beaten egg into the empty side and scramble until cooked.
  5. Add cooked rice to the skillet. Break up any clumps.
  6. Return cooked chicken to the skillet. Add pineapple, green onions, soy sauce, fish sauce (if using), sugar, and white pepper.
