- 2 cups cooked rice, day-old recommended
- 1 tablespoon vegetable oil
- 1 boneless, skinless chicken breast, cut into 1/2-inch cubes
- 1/2 cup diced fresh pineapple
- 1/4 cup frozen peas and carrots blend
- 1/4 cup chopped green onions
- 1 egg, lightly beaten
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce (optional)
- 1/2 teaspoon sugar
- Pinch of white pepper
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add peas and carrots to the skillet and stir-fry for 2 minutes.
- Push vegetables to one side of the skillet. Pour beaten egg into the empty side and scramble until cooked.
- Add cooked rice to the skillet. Break up any clumps.
- Return cooked chicken to the skillet. Add pineapple, green onions, soy sauce, fish sauce (if using), sugar, and white pepper.
- Stir-fry everything together for 3-5 minutes, ensuring all ingredients are well combined and heated through.
- Serve hot.

- Using day-old rice prevents the fried rice from becoming mushy.
