A straightforward recipe for a baked casserole featuring chicken and rice.

- 2 cups cooked chicken, shredded
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup water
- 1 cup uncooked long-grain white rice
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 2-quart baking dish.
- In a large bowl, combine the shredded chicken, cream of chicken soup, water, uncooked rice, celery, onion, salt, and pepper. Mix these ingredients well.
- Pour the mixture into the prepared baking dish. Spread it evenly.
- Cover the baking dish tightly with aluminum foil.
- Bake for 45 minutes.
- Remove the foil. Sprinkle the cheddar cheese evenly over the top of the casserole.
- Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
- Let the casserole stand for 5 minutes before serving.
Notes
- You can use leftover cooked chicken or rotisserie chicken for this recipe.
- If you prefer a richer flavor, substitute the water with chicken broth.
