Description
This recipe features tender chicken and shrimp in a rich, garlicky scampi sauce, served alongside flavorful garlic parmesan rice.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
- For the Rice:
- 2 cups uncooked white rice
- 4 cups chicken broth or water
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- For the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
- While the rice cooks, prepare the Scampi: In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until lightly browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Add the cooked chicken and shrimp to the skillet. Cook for 2-3 minutes, or until the shrimp turn pink and are cooked through. Do not overcook the shrimp.
- Stir in the fresh parsley, salt, and pepper.
- Once the rice is cooked, add 2 tablespoons of butter and 4 cloves of minced garlic to the pot. Stir until the butter melts and the garlic is incorporated.
- Stir in the grated Parmesan cheese and chopped parsley into the rice. Fluff with a fork.
- Serve the chicken scampi immediately over the garlic parmesan rice.
Notes
- You can adjust the amount of garlic to your preference.
- For extra heat, add a pinch of red pepper flakes to the scampi sauce.
- If you don’t have white wine, chicken broth is a good substitute.
