This low-carb chicken, spinach, and mushroom dish is baked in the oven for an easy and delicious meal.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 8 oz cremini mushrooms, sliced
- 5 oz fresh spinach
- 4 oz cream cheese, softened
- 0.5 cup heavy cream
- 0.5 cup shredded mozzarella cheese
- 0.25 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried Italian seasoning
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken cubes, sliced mushrooms, olive oil, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Spread the chicken and mushroom mixture in a single layer in a 9×13 inch baking dish.
- Bake for 15 minutes.
- While the chicken bakes, in a separate medium bowl, whisk together softened cream cheese, heavy cream, minced garlic, mozzarella cheese, and Parmesan cheese until smooth.
- Remove the baking dish from the oven. Stir in the fresh spinach until it wilts slightly.
- Pour the cream cheese mixture over the chicken and spinach, spreading evenly.
- Return the dish to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and the sauce is bubbly and lightly browned.
- Let stand for 5 minutes before serving.
Notes
- You can add other low-carb vegetables like bell peppers or zucchini.
- Adjust seasoning to your taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
