Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 8 oz cremini mushrooms, sliced
  • 5 oz fresh spinach
  • 4 oz cream cheese, softened
  • 0.5 cup heavy cream
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine chicken cubes, sliced mushrooms, olive oil, Italian seasoning, salt, and pepper. Toss to coat evenly.
  3. Spread the chicken and mushroom mixture in a single layer in a 9×13 inch baking dish.
  4. Bake for 15 minutes.
  5. While the chicken bakes, in a separate medium bowl, whisk together softened cream cheese, heavy cream, minced garlic, mozzarella cheese, and Parmesan cheese until smooth.
  6. Remove the baking dish from the oven. Stir in the fresh spinach until it wilts slightly.
  7. Pour the cream cheese mixture over the chicken and spinach, spreading evenly.
  8. Return the dish to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and the sauce is bubbly and lightly browned.
  9. Let stand for 5 minutes before serving.
