A simple recipe for cooking chicken thighs served over rice.

- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 cups cooked white rice
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Pat the chicken thighs dry with paper towels.
- Rub the chicken thighs with olive oil.
- In a small bowl, mix salt, pepper, and paprika. Sprinkle this mixture evenly over the chicken thighs.
- Place the chicken thighs skin-side up in a baking dish.
- Bake for 35 to 40 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is crispy.
- Let the chicken rest for 5 minutes after removing it from the oven.
- Serve each chicken thigh over 1/2 cup of cooked white rice.
Notes
- You can use boneless, skinless thighs; reduce the cooking time by about 10 minutes.
- For extra flavor, add garlic powder to the seasoning mix.
