  • 1 cup mixed frozen vegetables (peas, corn, green beans)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in chicken broth. Bring the mixture to a boil.
