A straightforward recipe for homemade chicken and vegetable soup.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup cooked, shredded chicken breast
- 1 cup mixed frozen vegetables (peas, corn, green beans)
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in chicken broth. Bring the mixture to a boil.
- Reduce heat and simmer for 10 minutes.
- Add shredded chicken and frozen vegetables. Cook until vegetables are tender, about 5-7 minutes.
- Stir in dried thyme. Season with salt and pepper.
- Serve hot.
Notes
- For richer flavor, use homemade chicken broth.
- You can substitute any cooked poultry for the chicken breast.
