- ¾ cup granulated sugar

- 2 ½ cups all-purpose flour

- 12 ounces fresh or frozen raspberries
- ½ cup granulated sugar (for filling)
- 2 tablespoons cornstarch
- 1 cup chocolate chips (milk or semi-sweet)
Instructions
- Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, cream together softened butter and ¾ cup granulated sugar until light and fluffy. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until crumbs form.
- Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan.
- In a medium bowl, combine raspberries, ½ cup granulated sugar, and cornstarch. Mix gently until raspberries are coated.
- Spread raspberry mixture evenly over the crust in the baking pan. Sprinkle chocolate chips over the raspberry layer.
- Crumble remaining one-third of the crumb mixture over the chocolate chips and raspberries.
- Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
- Let cool completely in the pan on a wire rack before lifting out and cutting into bars.
Notes
- For best results, use fresh raspberries when in season. Frozen raspberries can be used but do not thaw them before mixing with sugar and cornstarch.
- Ensure the bars are completely cooled before cutting to prevent them from falling apart.
- Store leftover bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
