  • ½ cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 cup chocolate chips (milk or semi-sweet)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together softened butter and ¾ cup granulated sugar until light and fluffy. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until crumbs form.
  4. Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan.
  5. In a medium bowl, combine raspberries, ½ cup granulated sugar, and cornstarch. Mix gently until raspberries are coated.
  6. Spread raspberry mixture evenly over the crust in the baking pan. Sprinkle chocolate chips over the raspberry layer.
  7. Crumble remaining one-third of the crumb mixture over the chocolate chips and raspberries.
  8. Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
  9. Let cool completely in the pan on a wire rack before lifting out and cutting into bars.

  • For best results, use fresh raspberries when in season. Frozen raspberries can be used but do not thaw them before mixing with sugar and cornstarch.
