- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 ½ pounds cream cheese, softened
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour

- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- For the Topping:
- ½ cup all-purpose flour
- ¼ cup packed light brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes, or until lightly browned. Let cool.
- In a large bowl, beat cream cheese until smooth. Gradually add 1 ½ cups granulated sugar, flour, cinnamon, nutmeg, and cloves, beating until well combined.
- Beat in eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
- Pour filling over cooled crust.
- For the topping, in a small bowl, combine flour, brown sugar, granulated sugar, cinnamon, and nutmeg. Cut in cold butter with a pastry blender or your fingers until crumbly.
- Sprinkle topping evenly over the cheesecake filling.
- Bake for 55-65 minutes, or until the edges are set but the center is slightly soft.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours before serving.

- Ensure cream cheese is fully softened for a smooth batter.
- Do not overmix the batter after adding eggs.
- Chilling time is essential for the cheesecake to set properly.
