A simple recipe for a moist coffee cake featuring cinnamon and mocha flavors.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon instant espresso powder
- 1/2 cup packed brown sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a small bowl, mix the cooled coffee, cocoa powder, and espresso powder until dissolved.
- Alternate adding the dry ingredients and the sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour half of the batter into the prepared cake pan.
- In a small bowl, mix the brown sugar and cinnamon for the topping. Sprinkle half of this mixture over the batter.
- Pour the remaining batter over the first layer. Sprinkle the remaining brown sugar and cinnamon mixture on top.
- Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- Use strong coffee for the best mocha flavor.
- Do not overmix the batter once the flour is added.
- You can substitute plain yogurt for sour cream if needed.
