Description

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk the buttermilk.
  6. Gradually add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Gently fold in the chopped peaches.
  8. In a separate small bowl, prepare the topping by combining the flour, granulated sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  9. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  10. Sprinkle the cinnamon sugar topping generously over the batter in each muffin cup.
  11. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  12. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  • If using frozen peaches, do not thaw them before adding to the batter.
