Description
These muffins combine the flavors of peach cobbler with the convenience of muffins, topped with a cinnamon sugar crumble.

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs

- ½ cup buttermilk
- 1 cup chopped fresh or frozen peaches
- For the Topping:
- ¼ cup all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, cold and cubed
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, whisk the buttermilk.
- Gradually add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the chopped peaches.
- In a separate small bowl, prepare the topping by combining the flour, granulated sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Sprinkle the cinnamon sugar topping generously over the batter in each muffin cup.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- If using frozen peaches, do not thaw them before adding to the batter.
- For a richer flavor, you can add a pinch of nutmeg to the topping mixture.
- Ensure your butter for the topping is cold for the best crumble texture.
