Description
A simple soup featuring meatballs simmered in a creamy coconut curry broth with orzo pasta.

- 1 pound ground chicken or turkey
- 1/4 cup breadcrumbs
- 1 egg
- 1 teaspoon ground ginger
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 4 cups chicken broth
- 1 (13.5 ounce) can full-fat coconut milk
- 1/2 cup orzo pasta
- 1 cup spinach, chopped
Instructions
- Combine ground meat, breadcrumbs, egg, ginger, curry powder, salt, and pepper in a bowl. Mix gently.
- Roll the mixture into small meatballs, about 1 inch in diameter.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add meatballs and brown on all sides. Remove meatballs and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Stir in garlic and red curry paste. Cook for 1 minute until fragrant.
- Pour in chicken broth and coconut milk. Bring the mixture to a simmer.
- Return the browned meatballs to the pot.
- Add the orzo pasta. Cook according to orzo package directions, usually 8-10 minutes, until tender.
- Stir in spinach during the last minute of cooking until wilted.
- Taste and adjust seasoning if needed before serving.
Notes
- You can substitute ground pork or beef for the chicken or turkey.
- If you prefer a thicker soup, cook the orzo separately and add it at the end.
- Use mild or hot curry paste based on your preference for spice level.
