Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon turmeric
- 1/4 teaspoon black pepper
- 6 cups chicken broth
- 1 head cauliflower, cut into florets
- 2 cups cooked shredded chicken
- 1/4 cup chopped fresh parsley
- Salt to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic, ginger, turmeric, and black pepper. Cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add cauliflower florets and cook until tender, about 10-15 minutes.
- Stir in shredded chicken and cook until heated through.
- Remove from heat and stir in fresh parsley.
- Season with salt to taste.
Notes
- For a creamier soup, you can blend a portion of the cauliflower and broth before returning it to the pot.
- Use low-sodium chicken broth if you are watching your sodium intake.
