Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 1 head cauliflower, cut into florets
  • 2 cups cooked shredded chicken
  • 1/4 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, ginger, turmeric, and black pepper. Cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a simmer.
  5. Add cauliflower florets and cook until tender, about 10-15 minutes.
  6. Stir in shredded chicken and cook until heated through.
  7. Remove from heat and stir in fresh parsley.
  8. Season with salt to taste.
