Make a quick and cheesy lasagna right in your skillet. This recipe cuts down the time without sacrificing flavor.

- 1 pound ground beef or Italian sausage
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1/2 cup water
- 9 no-boil lasagna noodles, broken into 2-inch pieces
- 1 cup ricotta cheese
- 1 large egg
- 1/4 cup grated Parmesan cheese, plus more for topping
- 2 cups shredded mozzarella cheese
Instructions
- Brown the ground meat in a large oven-safe skillet over medium heat. Drain off any excess fat.
- Stir in the tomato sauce, diced tomatoes, oregano, basil, and garlic powder. Bring the mixture to a simmer.
- Add the water and the broken lasagna noodles to the skillet. Stir gently to coat the noodles with the sauce.
- Cover the skillet and cook on low heat for 10 to 12 minutes, or until the noodles are tender. Check occasionally to prevent sticking.
- While the noodles cook, combine the ricotta cheese, egg, and 1/4 cup Parmesan cheese in a small bowl. Mix well.
- Remove the skillet from the heat. Drop spoonfuls of the ricotta mixture over the top of the lasagna.
- Sprinkle the mozzarella cheese evenly over the top.
- Cover the skillet again and let it sit for 5 minutes, allowing the cheese to melt.
- Remove the lid, sprinkle with extra Parmesan cheese, and serve directly from the skillet.
Notes
- Use pre-cooked sausage to save a few minutes of cooking time.
- If your skillet is not oven-safe, transfer the mixture to a baking dish after the noodles are tender and bake at 375 degrees Fahrenheit for 10 minutes until the cheese melts.
