Description

Make a quick and cheesy lasagna right in your skillet. This recipe cuts down the time without sacrificing flavor.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/2 cup water
  • 9 no-boil lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown the ground meat in a large oven-safe skillet over medium heat. Drain off any excess fat.
  2. Stir in the tomato sauce, diced tomatoes, oregano, basil, and garlic powder. Bring the mixture to a simmer.
  3. Add the water and the broken lasagna noodles to the skillet. Stir gently to coat the noodles with the sauce.
  4. Cover the skillet and cook on low heat for 10 to 12 minutes, or until the noodles are tender. Check occasionally to prevent sticking.
  5. While the noodles cook, combine the ricotta cheese, egg, and 1/4 cup Parmesan cheese in a small bowl. Mix well.
  6. Remove the skillet from the heat. Drop spoonfuls of the ricotta mixture over the top of the lasagna.
  7. Sprinkle the mozzarella cheese evenly over the top.
  8. Cover the skillet again and let it sit for 5 minutes, allowing the cheese to melt.
  9. Remove the lid, sprinkle with extra Parmesan cheese, and serve directly from the skillet.

Notes

  • Use pre-cooked sausage to save a few minutes of cooking time.
  • If your skillet is not oven-safe, transfer the mixture to a baking dish after the noodles are tender and bake at 375 degrees Fahrenheit for 10 minutes until the cheese melts.
