Ingredients

Instructions
- In a large bowl, combine the cooked rice, cucumber, bell pepper, and red onion.
- Add the chopped parsley and mint.
- In a small bowl, whisk together the olive oil and lemon juice.
- Pour the dressing over the rice mixture.
- Season with salt and black pepper.
- Toss gently to combine all ingredients.
