  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in cabbage, vegetable broth, diced tomatoes, thyme, salt, and pepper.
  4. Bring the soup to a boil.
  5. Reduce heat and simmer, covered, for 20 minutes, or until cabbage is tender.
  6. Serve hot.

Notes

  • For a richer flavor, add 1 bay leaf during simmering and remove before serving.
