Description
A simple, warm soup made with cabbage and vegetables.
Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups shredded green cabbage
- 6 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in cabbage, vegetable broth, diced tomatoes, thyme, salt, and pepper.
- Bring the soup to a boil.
- Reduce heat and simmer, covered, for 20 minutes, or until cabbage is tender.
- Serve hot.
Notes
- For a richer flavor, add 1 bay leaf during simmering and remove before serving.
- You can add other vegetables like potatoes or green beans if desired.
