Description

A comforting and easy chicken noodle soup made in your slow cooker.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 8 cups chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup egg noodles
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add carrots, celery, and onion to the slow cooker.
  3. Pour in chicken broth.
  4. Stir in thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  6. Remove chicken from the slow cooker and shred it.
  7. Return shredded chicken to the slow cooker.
  8. Stir in egg noodles and cook for an additional 20-30 minutes, or until noodles are tender.
  9. Stir in fresh parsley before serving.

Notes

  • For a thicker soup, you can add a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
  • You can substitute rotisserie chicken for fresh chicken breasts for a quicker option.
