Description

A comforting and hearty chicken and wild rice soup made easily in your slow cooker.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup wild rice blend
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add wild rice blend, carrots, celery, onion, chicken broth, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken from the slow cooker and shred it.
  5. Return shredded chicken to the slow cooker.
  6. Stir in heavy cream and parsley.
  7. Cook for another 15 minutes, or until heated through.

Notes

  • For a thicker soup, you can mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the soup during the last 30 minutes of cooking.
  • You can substitute brown rice for wild rice if needed.
