Description

Simple recipe for tender, flavorful short ribs made in a slow cooker.


Ingredients

  • 3 pounds bone-in beef short ribs
  • 1 large onion, chopped
  • 4 carrots, roughly chopped
  • 4 celery stalks, roughly chopped
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Instructions

  1. Season the short ribs generously with salt and pepper.
  2. Place the chopped onion, carrots, and celery in the bottom of the slow cooker.
  3. Arrange the short ribs on top of the vegetables.
  4. In a separate bowl, whisk together the minced garlic, diced tomatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, and rosemary.
  5. Pour the liquid mixture over the short ribs.
  6. Cover and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the meat is very tender.
  7. Remove the short ribs and set them aside. Skim any excess fat from the surface of the liquid.
  8. If you prefer a thicker sauce, transfer the liquid to a saucepan and simmer over medium heat until reduced slightly.
  9. Return the short ribs to the sauce or serve the sauce over the ribs.

Notes

  • Serve these ribs over mashed potatoes or egg noodles for a complete meal.
  • For deeper flavor, sear the short ribs in a hot skillet before adding them to the slow cooker.
