Ingredients

  • 6 cups chicken broth
  • 1 (16 ounce) package refrigerated cheese tortellini
  • 1 (10 ounce) package fresh spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and cook for 1 minute until fragrant.
  2. Pour in the chicken broth and add oregano. Bring the broth to a simmer.
  3. Add the tortellini to the simmering broth. Cook according to package directions, usually about 5 to 7 minutes, until the tortellini float.
  4. Stir in the fresh spinach. Cook until the spinach wilts, about 2 minutes.
  5. Season with salt and pepper to your taste. Serve hot.
