A simple recipe for creamy, comforting tomato bisque.
Ingredients

- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes and vegetable broth. Add basil, salt, and pepper.
- Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15 minutes.
- Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
- Return the soup to the pot. Stir in heavy cream.
- Heat gently until warmed through. Do not boil after adding cream.
- Serve hot.
Notes
- For a richer flavor, use whole milk instead of heavy cream.
- Serve with grilled cheese sandwiches for dipping.
