Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in crushed tomatoes and vegetable broth. Add basil, salt, and pepper.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15 minutes.
  6. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  7. Return the soup to the pot. Stir in heavy cream.
  8. Heat gently until warmed through. Do not boil after adding cream.
  9. Serve hot.

Notes

  • For a richer flavor, use whole milk instead of heavy cream.
