This Creamsicle Cake combines the nostalgic flavors of orange and vanilla in a moist cake with a creamy frosting.

- 1 box yellow cake mix
- 1 cup orange juice
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon orange zest
- 1 (3.4 ounce) package instant vanilla pudding mix
- 1 cup milk
- 1 (8 ounce) container frozen whipped topping, thawed
- Orange food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat with an electric mixer on medium speed for 2 minutes.
- Pour batter into the prepared pan.
- Bake for 28-32 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cake cool completely on a wire rack.
- While cake cools, prepare the frosting. In a medium bowl, whisk together instant vanilla pudding mix and milk until thickened.
- Gently fold in the thawed whipped topping until well combined. If desired, add a few drops of orange food coloring for a creamsicle color.
- Once cake is completely cool, spread the frosting evenly over the top.
- Refrigerate for at least 1 hour before serving to allow the frosting to set.
Notes
- For a stronger orange flavor, use fresh orange juice.
- Ensure cake is completely cool before frosting to prevent melting.
