Ingredients

  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon orange zest
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 cup milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • Orange food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, orange juice, vegetable oil, eggs, and orange zest. Beat with an electric mixer on medium speed for 2 minutes.
  3. Pour batter into the prepared pan.
  4. Bake for 28-32 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let cake cool completely on a wire rack.
  6. While cake cools, prepare the frosting. In a medium bowl, whisk together instant vanilla pudding mix and milk until thickened.
  7. Gently fold in the thawed whipped topping until well combined. If desired, add a few drops of orange food coloring for a creamsicle color.
  8. Once cake is completely cool, spread the frosting evenly over the top.
  9. Refrigerate for at least 1 hour before serving to allow the frosting to set.
