A simple recipe for a rich and flavorful soup featuring blackened chicken and cheese tortellini.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons blackened seasoning mix
- 1 medium yellow onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- Cut chicken breasts into bite-sized pieces. Toss the chicken with blackened seasoning mix until coated.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add onion, carrots, and celery to the same pot. Cook until vegetables soften, about 5 minutes.
- Pour in chicken broth. Add diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Reduce heat and simmer for 10 minutes.
- Add the cooked chicken and tortellini to the soup. Cook according to tortellini package directions, usually about 3-5 minutes.
- Stir in heavy cream and Parmesan cheese. Heat through gently, but do not boil after adding cream.
- Serve immediately.
Notes
- You can use pre-cooked rotisserie chicken if you skip step 1 and 2. Add the shredded chicken when you add the broth.
- For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water before stirring it into the simmering soup base (before adding cream).
