A simple recipe for a rich and comforting broccoli cheddar soup.

- 2 tablespoons butter
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1/4 cup all-purpose flour
- 4 cups chicken or vegetable broth
- 2 cups milk
- 1 pound fresh broccoli florets
- 8 ounces sharp cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in the broth and milk. Bring the mixture to a simmer, stirring often until slightly thickened.
- Add the broccoli florets. Cook until the broccoli is tender, about 10 minutes.
- Reduce heat to low. Stir in the shredded cheese until fully melted and the soup is smooth. Do not boil after adding cheese.
- Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, mash some of the cooked broccoli against the side of the pot.
- Use freshly shredded cheese for the best melting consistency.
- You can substitute heavy cream for some of the milk for extra richness.
