- 1 pound penne pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 head broccoli, cut into florets
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Cook penne pasta according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces, salt, and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add broccoli florets to the same skillet. Cook for 3-5 minutes until tender-crisp. Add minced garlic and cook for 1 minute more until fragrant.
- Pour heavy cream into the skillet. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Stir in grated Parmesan cheese until melted and the sauce is smooth.
- Return the cooked chicken to the skillet. Add the drained penne pasta. Toss everything together to coat evenly with the sauce.
- Stir in fresh parsley. Serve immediately.
Notes
- For a lighter sauce, you can use half-and-half instead of heavy cream.
- Add a pinch of red pepper flakes for a touch of heat.
- You can substitute other vegetables like peas or spinach.
