A simple, rich soup featuring tender chicken, soft gnocchi, and a creamy garlic broth.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (16 ounce) package potato gnocchi
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 4 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring the mixture to a simmer.
- Add gnocchi and Italian seasoning. Cook according to package directions, usually 3-5 minutes, until the gnocchi float.
- Return the cooked chicken to the pot.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese until the cheese melts and the soup is heated through. Do not boil after adding cream.
- Season with salt and pepper.
- Ladle soup into bowls and garnish with fresh parsley.
Notes
- For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering soup before adding the cream.
- You can substitute turkey for chicken if desired.
