  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil, divided
  • 1 tsp dried Italian seasoning
  • 0.5 tsp paprika
  • 0.25 tsp black pepper
  • 0.5 tsp salt, divided
  • 4 cloves garlic, minced, divided
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, Italian seasoning, paprika, 0.25 teaspoon of salt, and black pepper. Spread them in a single layer on a baking sheet.
  3. Roast the potatoes for 25-30 minutes, or until tender and lightly browned, flipping halfway through.
  4. While potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Season the chicken pieces with the remaining 0.25 teaspoon of salt. Add chicken to the hot skillet and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  6. Add half of the minced garlic to the skillet and cook for 1 minute until fragrant.
  7. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
  8. Stir in the heavy cream and the remaining half of the minced garlic. Bring to a gentle simmer and cook for 3-5 minutes, or until the sauce thickens slightly.
  9. Stir in the Parmesan cheese until melted and smooth.
  10. Return the cooked chicken to the skillet, tossing to coat in the creamy garlic sauce.
  11. Serve the creamy garlic chicken immediately with the roasted baby potatoes. Garnish with fresh parsley.
