Description
A smooth and comforting Jamaican breakfast staple made with cornmeal, milk, and warming spices.
Ingredients
Scale
- 1 cup yellow cornmeal
- 4 cups water
- 2 cups milk (evaporated or condensed milk for extra richness)
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, whisk together the cornmeal and water until smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken.
- Gradually whisk in the milk, sugar, cinnamon, nutmeg, and salt.
- Continue to cook, stirring frequently, until the porridge reaches your desired creamy consistency. This usually takes about 10-15 minutes.
- Remove from heat and stir in the vanilla extract.
- Serve hot.
Notes
- For a richer porridge, use condensed milk instead of regular milk and adjust sugar accordingly.
- You can add a splash of rum for an adult version.
- Garnish with extra cinnamon or nutmeg if desired.
